Apple Butter Crumble

Nothing says fall like an apple dessert. In her take on a classic apple crumble, 2023 F&W Best New Chef Hannah Ziskin of Quarter Sheets in Los Angeles uses a mix of apples that are both sweet and tart, Pink Lady and Honeycrisp, along with store-bought apple butter in her filling. Store-bought apple butter saves time and adds a delightfully jammy texture and concentrated apple flavor.

"Adding apple butter, which is thicker and richer than applesauce, ramps the flavor and contributes to a perfect gooey filling," Ziskin says.

A simple streusel topping of butter, brown sugar, and flour lends the crumble additional texture and buttery flavor. Serve your crumble warm with a scoop of vanilla ice cream for a dreamy, decadent dessert.

Frequently Asked Questions Apple crumble and apple crisp are a lot alike. Both desserts have a filling made from cooked fresh apples and warm baking spices topped with a streusel. In apple crumble, the streusel topping is made from a mixture of butter, flour, sugar, and baking spices, while in apple crisp, oats are added to the same mixture for a crunchier texture.

Both apple butter and applesauce start by slow-cooking apples until they are soft. The difference is that applesauce has a lighter consistency due to the amount of water remaining from the cooked apples. As the mixture continues to cook, more water evaporates, causing the mixture to thicken and caramelize, resulting in apple butter.

Apple butter is a versatile ingredient for both sweet and savory dishes. You can add it to pancake mix, spread it on biscuits, or spoon it over vanilla ice cream. Stirred into hearty sides like these sweet potatoes gives them an extra layer of sweetness.

Apple crumbles and other baked desserts made with fresh fruit will keep at room temperature, covered, overnight. They can also be frozen for up to two months. To reheat, defrost the crumble then bake in a 350°F oven until warm.

Notes from the Food & Wine Test Kitchen You can substitute oat flour and tapioca flour for all-purpose flour. To bake the crumble, you can use a Pyrex or ceramic baking dish, as long as it is roughly the same size.  Make ahead The streusel topping can be made up to a month in advance and kept frozen in an airtight container.

The chill in the air invites home chefs to create warming autumn dishes, perfect for the cosy nights ahead.

Dishes like delicious apple cider chicken stew and pumpkin alla vodka pasta are just the start. But nothing beats the classic British dessert that's particularly adored this season — apple crumble.

Gordon Ramsay's got your back with a recipe he promises will "get you in the mood for those cosy nights in" while helping you make the most of the seasonal fruits. In a video Gordon revealed: "My next recipe is a proper British classic, that is super simple to cook, and costs next to nothing [to bake], a delicious apple crumble."

He added: "Crumbles are the perfect way to use fruit when it's in season, there's lots of it about, it's nice and cheap, but most importantly the fruit is at its absolute best."

Ingredients

For the apple filling:

  • Six apples, cored but not peeled. Three apples cut into chunks, three apples grated.
  • Six tablespoons of caster sugar
  • One vanilla pod, seeds only
  • Zest of one lemon
  • Lemon juice
  • Pinch of cinnamon
  • Three tablespoons of dried cranberries
  • For the crumble topping:

  • 100g of plain flour
  • Two tablespoons of demerara sugar
  • 50g of butter
  • Pinch of cinnamon
  • Four tablespoons of nutty granola or muesli
  • Kitchen equipment:

  • Mixing bowl
  • Stove-proof and oven-proof baking dish that can go from stovetop to oven.
  • Method

To begin, preheat the oven to 200°C/Gas 6. Take your stove-proof baking dish, add the caster sugar to it and heat it on the stove for five minutes until it caramelises.

Next, add the cinnamon, vanilla seeds and three grated apples to the dish and bake for around two minutes. Slowly stir in the apple chunks next, and then add the cranberries, lemon zest and lemon juice. Then remove the baking dish from the heat and set aside for now.

In order to make the crumble topping, add flour, sugar, butter and cinnamon to a mixing bowl and rub together with your fingertips until the mixture is crumbly and resembles breadcrumbs. Next, add your nutty granola or muesli to the mixture and keep rubbing together until fully mixed.

Then, take your baking dish with the apple filling and add the crumble on top of the fruit. Hear once again on the stove until the mixture is bubbling.

Now place in the oven and bake for around 12 to 14 minutes until baked to a deep golden colour. Once ready, remove it from the oven and your warm apple crumble is ready to serve.
