These Hasselback potatoes from Chef Sabyasachi Gorai are loaded with cheese and walnuts – perfect for a light meal

We're always on the lookout for interesting ways to serve potatoes and this version of the famous Hasselback Potatoes from Chef Sabyasachi Gorai is going to be one of our favourites.

Loaded Hasselback Potatoes With Cheese And WalnutsIngredients500 g large potatoes Salt, to tastePepper, to taste1 tbsp olive oil ½ small red onion, finely chopped 50 g walnuts, roughly chopped 2 sprigs thyme, leaves only 50 g mature Cheddar, grated Chopped chives to serve

Method

  • Place a potato between the handles of two wooden spoons and cut down to the handles, 0.5 cm apart (using the spoons prevents the potatoes from inadvertently being sliced through). Repeat with the remaining potatoes. 
  • Bring a pot of water to the boil and add the potatoes, cooking in the boiling water for 12 to 15 minutes until just tender. Remove the potatoes from the water and drain well. 
  • Place the potatoes, cut side up, on a large sheet of foil in a single layer.
  • Season and drizzle with the olive oil. Sprinkle the onion, walnuts, thyme and cheese over the potatoes. 
  • Pull together the foil to seal, creating a tent effect. Place on a BBQ or griddle pan for 10 to 15 minutes until the cheese has melted. 
  • Carefully remove from the foil tent, sprinkle with the chives, and  serve.
